What to do with canned pumpkin
... that isn’t pumpkin pie or pumpkin soup ?
For long-winded reasons that I will spare you, I’ve ended up with three cans of surprisingly expensive pumpkin (100% , no other ingredients). What on earth can I do with it? Maybe a tiny bit in risotto?

There was a Co-op Facebook video with pumpkin biryani that I saw the other day. They’d done it with fresh pumpkins but I’m sure you could use tinned for the same effect. It looked nice.

I’m sure a saw a recipe for pumpkin cinnamon rolls somewhere, probably Pinterest. This type of thing. Pumpkin pie spice is apparently cinnamon, ginger, nutmeg and allspice.

Pumpkin cake is good. A bit like carrot cake but easier to make as you can just put the canned pumpkin in without the faff of grating carrots. It has a nice texture. I don’t have a recipe as I haven’t made it for years but it’s quite popular in the US so there are loads of recipes online.
Pumpkin gnocchi. Pumpkin ravioli (amazing with sage butter). I’ve only ever eaten these two and I’m sure the ravioli in particular would take a while to make, but the ones I had were really incredibly delicious.

Oh yeah, I made a really nice pumpkin cake using canned pumpkin. eta. It was this one. My book’s in the shipping but this looks like the recipe. I definitely substituted canned pumpkin when I made it: https://www.thedailymeal.com/recipes/pu ... eam-recipe I didn’t make the ice cream although I’m sure it would have been delicious with it.
How about pumpkin mac n cheese? You could do a breadcrumb type topping with chilli and sage or something?

I was going to say gnocchi too, as long as the pumpkin isn't too wet. I make it with squash rather than pumpkin but it should be basically the same. I put roast garlic, ceps (the tiny bits or cep powder), parmesan in the gnocchi mix (truffle oil if you like it) and have it with sage brown butter, mushrooms, toasted hazelnuts and cavolo nero.
Or basically the same ingredients above but as a lasagne or a rotolo.

Pumpkin and chocolate chip muffins are divine. When I was a student I used to live over the road from the cafe that served the ones mentioned in the blog post below, they were justly famous.

I found some in WF! I also saw this recipe in the Guardian today (the whole Feast section is great today, actually) which uses up a bit of puree: baked apples with pumpkin caramel and rye crumbs The halva and white chocolate Rice Krispie ghosts and honeycomb and chocolate monster feet look great too
