The meat was gorgeous, as were the mushrooms and spinach, top pastry was good but I still got a soggy bottom. I can only presume my oven is rubbish as he said 25 minutes 200 degrees and I took more like fourty and was still pink enough. Definitely worth trying though, mr is on seconds

Wellington always seems to take us an age longer than planned. We usually do Gordon (he has a couple of different recipes, so usually one or a combo but I haven't done the crepe version).
I'd give that a good go! It looks so good! I have never put spinach in.

I’ve never put spinach in before either but it looks a brilliant addition! That looks fantastic, Jude, and a perfect project for a rainy autumn day.

That looks amazing. I never trust cooking times for meat, 25 mins for something that size sounds bonkers

It looks amazing! I presume you precook and squeezed out the spinach first, otherwise that won’t have helped with any sog?

That sandwich and the focaccia look amazing! I could live off sandwiches.
Hippy - yes both the mushrooms and spinach were sautéed in the same pan the beef was seared in with a bit of butter salt and pepper than I dried the spinach on kitchen paper and squeezed it. That said I only had frozen spinach which is quite a different texture so maybe that was the problem?

Wellington and hunks of beef in general always take longer than recipes suggest I find. Also rack of lamb.
