I just do chocolate ones which they can open at breakfast which is apparently all the excitement they need. And it doesn’t fill my house with more stuff.

Squirrel, you're going to have to update the thread title. Not that I want less time to get organized!
I am almost on top of birthday girl buying. Just need to order her glockenspiel, which was what she asked for. I am hopefully grabbing a secondhand music stand later today, and she has some bits and pieces like slippers, Fluff (yes, the gross jar of marshmallow), books and smelly stuff. Done!
The birthday boy has asked for a punchbag to practice karate on. (Cobra Kai addict.)

I’ve bought S the Schleich dinosaur one which looks ok. I haven’t had a close look at it yet though.
My aunt gave S some dinosaur masks from Clockwork Soldier who have some nice paper based gifts.

I just had a thought to get personalized reusable straws as stocking fillers (we have a general use pack of metal ones) and found some for a reasonable price on Etsy. I thought I'd share in case that helps.

I ordered this from Amazon (I know). It makes little wooden trains which as far as I can see will fit on the Brio etc wooden tracks. And if they don't they can be a nice Christmas tradition to bring out.

Some great ideas on here, and special thanks to Wendy, we’ve bought S a slush puppie machine as she loves them but hates paper straws as they go soggy too quick so they’ll be a perfect stocking filler!
