In Need Of Inspiration
I'm looking at my vegetables and would like to know how these inspire you with menu planning?
Caulflower (huge)
Butternut squash (large0
New potatoes (loads)
Spring onions (bulbous/ massive)
Carrots

I’d go basic.
Are the new potatoes nice? If so, I’d just boil (or roast) and have a plate with butter and chopped spring onions and possibly some cheese if I fancied it at the time.
I’d make a soup from the squash and carrots.
I would not consume the cauliflower.

I made a delicious cauliflower and lentil salad at the weekend, with a green olive and herby dressing. It was from Greekish (Georgina Hayden) (can photocopy this evening if you like). The cauliflower I had was so massive I used half the next day for Ottolenghi's cauliflower shawarma which is also a good recipe: https://thehappyfoodie.co.uk/recipes/th ... en-tahini/

Big cauliflower cheese (or two, one for the freezer - best done with roasted cauli not boiled)
Popcorn cauliflower (the BBC have a couple of nice recipes)
Whole roasted cauliflower with cheedar beer sauce
I'd roast cubes of bns and stick them in the freezer as easy additions to dishes or soups in the future, smash (and roast - are you seeing a theme? ) the new potatoes or simply boil them if I had some nice fish for them to accompany, use the spring onions on garnish for everything I ate for the next couple of weeks and...you guessed it...roast the carrots with honey, or parmesan etc etc and eat them as a side dish with everything.

I love cauliflower! I also love that Monk has finally embraced it and bns even though I don't love it, or any orange vegetable with the exception of peppers.
I had/ made bang bang cauliflower for the first time the other week and it was so lush and easy. I can't believe I've never had it before. I'm assuming that it's similar to popcorn cauli which I['ve also never had before but I shall look.

I could have done with seeing this 20 minutes ago when I was in M&S buying cauliflower and looking for tahini. But I did have all the ingredients & am about to dress my lentils.

THanks, that does look nice though I don't need the recipe as I watched the videoso I can remember it. It's a good adaptable recipe. I just used greek yoghurt. The Fage one is pretty thick.
