In no particular order and are either lunch or dinners

Roast chicken dinner
American goulash
Tuna in a tomato sauce with pasta
Fish finger sandwiches
Beans or eggs on toast
Jacket potato
Malaysian satay curry

I forgot to say, I nicked your firecracker beef when I had unexpected guests and nothing much in the freezer that would stretch to more than two portions except mince, and not much time to cook/shop. It went down really well!

Burgers
Szechuan pork noodles
Italian baked beef rice
Chicken goujons and homemade chips
Pork fillet of some kind
Spaghetti with Parma ham, rocket and chilli cherry tomatoes

I've been planning this week:
greek beans with baked feta, pitta, cucumber, tomato & herb salad
courgette penne with spinach balls, rocket and green bean salad
Anna Jones veggie chilli with all the fixings
cheesy baked pasta shells with rocket salad
pulled mushroom tacos with all the fixings

Lentil moussaka made with leftovers of above
Chard frittata
Salmon, polenta, watercress pesto
Gochujang cauliflower wings, tofu, oriental greens, rice, pickled radish

I've started getting a veg box again which is making me have to think about meals rather than making it up as I go along.

This week’s plan is not super exiting:

Firecracker beef
Pumpkin and feta flatbread with lemon chicken salad (2 nights as MrE is away)
Roast chicken
Leftover roast chicken salad with black beans and sweet chilli dressing
TBC as it’s the evening my mum arrives - maybe takeaway, maybe some simple pasta dish

I don't usually choose aubergines but three came in my veg box. I am quite looking forward to them.

I don't cook with them a lot, but I love them. Aubergine curry is a great call, and I quite fancy kiwi's moussaka too. :))
