I bought a pumpkin or two from Aldi and decided to make the Happy Pear's pumpkin Mac and cheese

It wasn't completely vegan as I used a bit of worcestershire sauce and added some mozzarella cheese that needed using up and I had to add a bit more almond milk and seasoning to get it to a loose sauce.

I do love it, it's so tasty and fairly guilt free due to not having half a ton of cheese in it 😂

That looks lovely bramble - I've had a macaroni cheese craving but not really wanted rich cheesiness so maybe that recipe is the answer. I would need to track down quite a few ingredients though. :puzz:

Nah, Marshfield Farm kindly delivered (for a reasonable fee) both their plant based flavours and the brownies on Monday. :mrgreen:

:)) Is it really nice? It looks very creamy. I want to try my hand at coconut cream ice, but need to make more space in the freezer.

The stir fry was supposed to be with noodles but we were out, and I threw some reduced burgers into the mix. Proper mash up. :lol:
