Quick but surprisingly tasty recipes

I thought it might be nice to have a thread for quick recipes that are actually really nice, as everything we cook has to be quick nowadays.

Share anything you like, but bonus points from me if it's meat free/has a decent amount of veg.

I had this tonight which was really delicious. I had it with garlic flatbread.

This is very easy, and very tasty. You could add chicken if you wanted more protein, but it's nice as it is. We tend to have it with garlic bread of some kind.

Oooh all of those look good! I have made your middle one before Est, it's lovely.

I think I have orzo in the cupboard but never think to use it, so it's good to have a recipe!

This one is good too, and even quicker if you replace the chard with a bag of baby spinach just added for a minute at the end.

I like making this alot and adapt to add protein (cooked chicken or
cannellini beans for example) or extra vegetables (mushroom, more peppers) depending how I feel.

I love Meera Sodha but haven't done that one yet!

I haven't had gnocchi for ages, need to rectify that.

I haven’t tried this yet but it’s on my list, my colleague had it the other day and said it was delicious. It’s slow cooked so quick to prepare at least…

I've just eaten a tasty meal that I sort of made up, but would have been based on a composite of recipes I've used before.

Anyway it was a quick and veggie fridge bottom dinner. We had it with garlic bread, but we do tend to have GB with lots of things.

Morgs' Veggie Crumble
Empty fridge bottom of remaining vegetables (I had a leek, celery, carrots, mushrooms, onions and baby potatoes, but anything would do, really)
Chop into even sized bits, or slice in a Magimix if you have a thick slicer blade.
Melt oo and butter in a shallow pan or ovenproof casserole dish and sautée the veg
When it's starting to colour, add about half a pint of water and a stock pot or cube and cook until soft enough to eat
I added in a small tin of sweetcorn at this point, but peas would do instead or as well, or you could miss them out
Using the back of a spoon, take out as much of the stock as you can and reserve
Add a couple of tbls of flour and cook it off
Stir in some Boursin or you could use Philly and garlic or cream/creme fraiche or miss it out and just add garlic at the sauté stage - I had about 2/3 of a Boursin lurking in the fridge, and add milk and the reserved stock to make a fairly thick sauce. Add sage and black pepper to taste.

In a separate bowl combine wholemeal breadcrumbs (I used 3 medium slices), some oats, grated cheddar, a bit more sage and mixed seeds (I used about half a pack of the Aldi/Lidl ones with lots of sunflower seeds)
Sprinkle over the vegetable sauce thickly, and bake until the crumble is browned and 'set'

Scoff.

That sounds good!

I actually bought the ingredients for several of these this week, but I've had a stomach bug and still can't eat properly so haven't managed to actually make any yet.
