What are your faves? Any t&t recipes or books you can share/recommend?

I am desperate for some cracking home-made soup recipes to have on rotation for lunches and I'm struggling a but. Mr does most of the cooking and I'm not sure if its because they are blended into oblivion but they are always a bit 'thin' and not too satisfying.

So any suggestions would be mega.

Hot & sour courgette soup - though it is quite thin but it's very flavourful - purpledress (?) posted this ages ago but I make it a lot

Jamie Oliver chickpea and leek soup - emmap got me on to this and it's lovely (can photo from the book if you want it)

There's a lentil & lemon soup recommended on here before either by emma or Wendy or both and that's really nice too.

My only go to soup that I make is butternut squash and sweetcorn.

Roast the squash with an onion til soft and a bit crisped.
Meanwhile cook a potato in stock of choice. When potato is cooked add sweetcorn and some chili flakes and add the onion and butternut squash. Blitz til smooth. Add more water if needed.
Yum.

I'm obsessed with soup! I think my favourites are:

Red pepper, sweet potato & chilli
Broccoli & cheddar or stilton
Lentil & ham hock
Spiced butternut squash
Chicken noodle

I've made them all so often that I don't really use a recipe.

There's a Delia one - Tuscan white bean soup. It's really nice but quite labour intensive I seem to recall.

Ooh this looks nice and I've got several red peppers and tomatoes to use up. I've got some lovely wild garlic & rosemary mixed nuts and seeds to use for this.

I'm excited for this.

Thanks for the suggestions, I will check them out.

I love soup a lot in the winter, especially if they are chunky and almost casserole like. We have a lentil and bacon soup on the go and its fine but not quite hitting the spot for some reason. I like a slice of lentil soup ideally.

We've had this soup this week. It's so good.

I sometimes do a roasted tomato and red pepper soup which is tomato, peppers, onion, garlic, celery and a tin of tomatoes roasted in the oven, then blended with stock
to a suitable thickness and sieved to get rid of skins and pips.

This is also good, a but sweet but also warming with the spices.

This is one of my favourite substantial soups. I just use whatever potatoes and squash.

I'm soup OBSESSED! Currently making one of my favourites for dinner - Anna Jones ribollita: https://annajones.co.uk/recipes/white-b ... ibollita-2 It's a pretty substantial soup.

Dics mentioned another of my favourites, Jamie's leek, chickpea and parmesan. I also love his jerusalem artichoke, potato and thyme soup.

Alison Roman's spicy tomato, lentil and fennel soup is up there too.

And chowder. Got to love a chowder :love:

I also LOVE French onion soup (chicken stock not beef for me) especially served with baguette and melted gruyere, mmmmmmmmmmm!

If you like chunky stew-like soups, minestrone is a good one?

I also make caldo verde quite a bit (chorizo, potato and kale) and it’s really tasty and filling.

Oh yes, Emma, chowder! Cullen skink is amazing too.

León Winter Minestrone Soup is my go-to, from the Happy Soups book I received as a present several years ago. I don’t generally bother with the bacon. I use whatever winter greens I have to hand, and I use whatever dried noodle I want to use up also. Sometimes pasta, sometimes dried egg noodle baskets.

I used to make a nice butternut & coconut milk soup. I think the recipe was originally from the Sainsbury's magazine. But this is pretty similar;

That sounds lovely, Wendy. When they say a yellow squash, do they mean one of those little ones the size of tennis balls, or is it something different?

I make this a lot: Spicy Indian Tomato Soup. I use all canned tomatoes (2 x 400g cans of the best chopped tomatoes you can find) and, therefore, generally add a teaspoon or so of balsamic vinegar to compensate for any acidity. I also use a half tube of pureed coriander, rather than fresh, as it adds a little sweetness.

It's very quick and, frankly, ought to be available on prescription as a pick-me-up. :))

I've never seen coriander puree. I'll look out for it, as I love the tubes of garlic and the flavoured tomato purees, so can imagine it being useful.
