I just can’t get the dough right, even with cooking it in a pan on the job. I can’t get it thin enough to be crispy right through, there’s always a doughy bit. I need more practice, but it always leads to slight disappointment.

absley, I love a whole roasted cauliflower. I miss the one they make at Delamina East.

I have several stones! But recently I’ve found that I get a better result using a frying pan on the hob.

Which recipe do you use for dough, Pip? And do you cook in the oven, or the bbq?

I’m still learning but have definitely improved from my patio slab days :))

I’ve been experimenting with shop bought dough. :shh: I use a cast iron pan on the hob & transfer to the oven.

Honestly, that pizza looks 1000000% better than pizzas you buy at a supermarket or most takeaways.

I really love burrata. I have a kit for making some so I might do that. I really want kleftiko too now.

It was fucking incredible, although approx 5 million calories. BUT it did have dates in so counted as one of your five a day. :sman:

Your pizza looks great pip, do you use a rolling pin? I got better results rolling with a pin then sort of hanging it and rotating it before putting in a frying pan and stretching over the sides? It does spring back just rolling it, and I’m too short to do the tossing over my head malarkey 😂

Kleftiko was marvellous, I can heartily recommend ( add double or more oregano though and it definitely needs topping up with wine or water halfway through) mr b had third helpings so it was obviously good.

I do the hanging and rotating too :technical:

Yesterday I made greek lamb burgers but made way too much fava dip and tzatziki so decided to go with the theme and made a spanakopita swirl this afternoon. Broad bean, pea and herb rice and halloumi too. I am so full :emme:

Yes, I hang & stretch rather than rolling pin. I think I’m just rubbish at it.

I had to read the assembly instructions for the swirl about 5 times :lol: so I’m pleased it turned out ok!

The Greek food all looks amazing. Would you possibly post the recipes you used for your swirl and the rice, Emma? I've got feta and filo just calling out to be used.
