I'm making courgette pasta tonight! With a fennel, pea, basil, chicory and rocket salad.

I'm not good at planning but I should do this retrospectively because it would jog my memory when I'm thinking what to cook.

Wendy, I recognise a few Anna Jones recipes from your plan last week. Did you like them?

Edited because I can’t type 😀

We haven’t got quite through the week yet but good spot! They were all ones you mentioned when I asked so I was going to report back. The tofu and XO sauce was delicious - I had the leftovers for lunch today.

Weirdly I was looking at that thread the other day as I've cooked a few new and really good recipes recently and was going to recommend them but I failed to take photos!

I'll see if I can remember the last week:
yesterday: franco manca pizza in the park and prosecco (meeting up with a friend/neighbour who is over from Delhi) No vegetables were consumed apart from some rocket on a pizza :panic:
Sunday: chorizo and potatoes (old Nigel Slater/Nigella recipe) with padron peppers, chicory, baby gem and rocket salad
Saturday: Alison Roman wedge salad and grilled chicken hot wings, celery sticks and ranch dip :ready: Hot dogs in brioche buns for the kids. Crisps on the side.
Friday: courgette flower pasta (old favourite Genarro Contaldo recipe) and rocket, chicory salad
Thursday: dishoom delivery :ready:
Weds: Alison Roman salmon with soy and citrussy charred spring onion, steamed rice, broccoli, smashed cucumbers with sizzled turmeric and garlic

I have planned tomorrow though:
Ottolenghi black pepper tofu (plain tofu for Liv), dry fried ginger beans, smacked cucumber, steamed rice.

Beetroot and hazelnut salad
Quinoa, sweet potato and kale salad
Summer veg tarts and salad
Cranberry and almond salad with roasted broccoli
Potato and green beans with smoked tofu
Coconut kale risotto

You can tell I planned this in a heatwave. I'm also fairly sure I'll be wanting vegetables after a weekend of camping at a festival where I've decided I won't be cooking so we're eating out. And it's all fully vegan.

We eat a lot of the same foods and they are more along the lines of kiev and fish fingers. I rarely cook from scratch after a spate of shit food and I've not got that mojo back. So I don't post my meal plans out of shame. :))

It does! I'm looking here for ideas though I can't plan much at the mo: just getting a handle on what to buy where and got a chest freezer delivered last week ( integrated freezer is big enough for a bag of chips and peas, some ice and a pack of Magnums, pretty much) so can plan a bit more. The whole food shop gets a veg delivery on Thursdays so I just go there in the morning and see what's what and then work from there.

This week:

Socca with courgettes, tomato, olives and feta ( salad and new potatoes)
Chicken/ chard madras and rice ( a woman round here makes fresh curry pastes)
Probably haddock, chips peas ( Ie not reliant on a specific veg as don't know what I'll have but trout could be utilised alternatively if the veg inspires)

And then will plan onwards once my veg is known.

I’ve been making a raw tomato, chicken and basil spaghetti dish recently, Dics. It’s so good.

This week’s plan:
Salt and pepper chicken burgers and homemade chips
Chicken, lentil and spinach jalfrezi
Roast pork with pumpkin and other veggies
Leftover pork fried rice
Spaghetti with Parma ham, cherry tomatoes and rocket (if I can get rocket - have failed at two shops so far!)
