It's so delicious. The inside is lurid green as well. Lurid in a fresh, rather than, alarming way. I'm looking forward to this heralding the start of every spring. :love:

Artistic people could really pretty that up. Didn't Jet do a beautiful focaccia in lockdown?

The JO soup!

I'm going back in time to try to remember since Friday

F: dishoom deliveroo
S: sausages, mac n cheese, slaw, s'mores
S: AR wings, wedge salad, ranch dip celery and crisps to dip. Strawberry cake for dessert.
M: lentil and chard gratin (probably last time until autumn!), salad, wild garlic bread.
T: Picked up Lebanese on the way home - mini manakish: halloumi rolls, feta and spinach, spinach triangles plus hummus, baba ganoush, cherry tomatoes, cucumber, salad
W: Cauliflower shawarma with green tahini sauce, red cabbage slaw plus pitta, hummus, baba from the Lebanese yesterday. AR fig and almond cake for dessert.

Veggie shepherds pie with swede/cauli mash topping
Creme fraiche pasta with scallops
Gochujang tofu with stir fry cauli rice
Swede dahl
Freezer dinner (I've got out of the habit of labelling things again so it's freezer surprise :)) )

This week:
Lemon Basil tofu
Leftover chilli and rice
Aubergine and tofu katsu curry
Tomato and sausage casserole
Aubergine and potato moussaka
Roasted cauliflower shawarma with shawarma-style seitan
PB quorn fried rice


Next week:
Olive chickpea waffles (sort of a socca but done in the waffle maker)
Homemade pizza
Lentil stew on hummus
Baked tempeh nuggets, corn on the cob, baked beans
Provençal potato gratin
Sri Lankan dal (we have a Sri Lankan spice powder recipe and hope to recreate the one Elvis loved in a restaurant)
Spag bol

We've done a half week plan which will also provide freezer meals.

Fritatta for lunches
Sweet and sour chicken
Chicken and porcini pasta
Korean style chicken burgers

Bearnaise sauce :hbeat: and The olive chickpea waffles sound good!

Plan for this week:
Aubergine parmigiana with garlic bread and rocket salad
Sweet potato falafel, rice pilau, slaw
Potato, halloumi and asparagus salad
Roast chicken, quinoa salad
Chicken, asparagus and pea risotto, salad
Either homemade pizza or BBQ

Prawn saganaki
Leftover saganaki with potatoes
Potato/swede tortilla with asparagus, chard and mange tout
Salmon with bulghar wheat, veg and labneh
Smoked mackerel pasta

Emma's asparagus risotto has made me hungry, I must remember to make the most of asparagus season this year.

I love asparagus season!

Because I’m some kind of masochist l decided to make focaccia to go with the aubergines and it was pretty good! I’m so excited, I just love focaccia 💕

Swede/pot mash, sausage, gravy
Leftover risotto balls, tom sauce


I've got artichokes coming in the veg box which I will have to do *something* with, and a shed load of cauliflower that I will probably roast for salad lunches.
