I just made this. A chicken, tomato, chilli and mozzarella pasta bake. I threw in a bit of broccoli as well.

I’m never sure about chicken and pasta but it looks good!
The toasted coconut and cashew cookies that were made because I missed the ones that used to come free with tea in Busaba Eathai years ago. They aren’t exactly the same but they are delicious!

I toasted both the cashews and coconut before mixing in to the cookie dough.
The lemongrass tea is just bruised lemongrass sticks steeped in hot water with a little honey. So good with the cookies!

This is a somewhat pointless post as I have no photo and it wasn’t really cooking, but I made an epic sandwich today for lunch. It was leftover roast lamb on warmed focaccia, spread with harissa mayo, marinated roasted red peppers, sliced pickled jalapeños, and a drizzle of the leftover herby oil dressing from the Barbuto roast chicken. It was SO GOOD

That sounds lovely, Epp. I've really been enjoying sandwiches recently and lambwiches are a particular fave.

It sounds like an epic sandwich! The green Barbuto sauce is so delicious. You've made me crave it. We had a roast chicken on Sunday though (and used the leftovers the next day in a yellow curry) so it won't be coming up for a while (chicken is SO expensive here right now!)

It's crazy - D paid £7 for four small chicken thighs the other week, and that was discounted!

Those cookies sound amazing!
I made a couple new things this last week. The chicken and rice was phenomenal! S declared the rice very good and better than any rice I've ever tried to feed him before :lol:
Mushroom pot pie which I think I could do better at next time having done it once but I enjoyed it.
I also made an apparently Polish dip called Gzik. Very simple but it was good.

What's the recipe Estrella? I have chicken defrosting and no potatoes ( or plan) so this would be ideal.

More brown food. This was really good. The crunch on the bread was audible and very pleasing. It was almost like a light batter. Macaroni cheese toastie.
