Got a couple of new recipes on the plan this week:

Chilli lime sweet potato and chicken bowls
Bruschetta chicken spaghetti
Katsu curry
Pork fillet with veggies
Roast chicken, pumpkin, carrots and onions
Spaghetti with cherry toms, rocket and prosciutto

Elvis and P have planned:
Fishless fingers/steak with fries and beans/mushrooms and onion rings
Pie and veg
Surprise dinner (she’s making him macaroni cheese but he’s not allowed to know :lol: )
JP and beans

Then ROW is emptying the freezer.

Still getting over post Covid lack of enthusiasm/energy for cooking so we'll see if this is stuck to:

Salmon, potato & roast veg salad
Tofu, Thai salad, miso aubergine
Roast Savoy cabbage, bulgar lentil pilaf, labneh
Kimchi omelette, rice with radish & peas

It will basically be an omelette folded over a tin of kimchi. :lol: I'm not up to making kimchi, although I did see a recipe for instant cauli kimchi made out of the scraps/stalks that looked easy enough at the weekend.

These were both a success. I need to tweak the sweet potato bowls a bit to add a bit more spice but the spaghetti was perfect.

This week (have realised it’s a bit chicken heavy!):

Garlic and lemon chicken salad
Roast chicken with pumpkin, carrots, onions and broccoli
Leftover roast chicken salad with black beans and chilli sauce
Kangaroo burgers on brioche with homemade chips
Pork stir fry (probably soy, homegrown honey, garlic and chilli-based)
Turkey Mac (that American instant pot “goulash” recipe - found some in the freezer!)
