Su - away at N's house.

This week:
Leftover Christmas lunch
Hotpot and broccoli
NYE pizza and nibbles
Pasta and shop bought sauce
Homemade pizza/fondue
Sausage, Xmas macaroni cheese and garlic bread
Garlic ginger tempeh over broccoli and quinoa

Coming week:
Falafel and salad
Freezer hotpot and veg
Creamy linguine Alfredo
Bean chilli
Pumpkin lasagne with marinated avocado
Chickpea pancakes with sautéed beans and greens with lemon tahini dressing

Also, edamame & broccoli soup and pumpkin chickpea curry stew for lunches.

Charred cabbage with harissa lentils
Beef curry, sri lankan dal, rice
Potato rogan josh, roti
Tofu with peanut slaw
Coconut and cauliflower curry (with any leftovers from previous curries!)
Quesadillas
Roast broccoli satay and peas fried rice

Lunches will be cannellini beans with sweet paprika and garlic or chickpea socca pancake with creamy mushrooms.

We're not getting a delivery this week so it's store cupboard/freezer week.

M: Sausage and mash with onion gravy, broccoli. Vanilla roasted rhubarb with custard.
T: Roast chicken with jerusalem artichoke gratin, spinach and green beans.
W: Chicken and leek pie, roasted carrots and sprouts and buttered peas.
T: Sweet potato falafel with brown rice and slaw. Some kind of bundt cake for dessert in my new tin :love:

S: Chicken and zucchini burgers with slaw.
S: Golden mushroom and orzo soup. Chicory and rocket salad. Hazelnut, pear and ricotta cake.
M: Ribollita, focaccia and more CAKE :ready:

But what are you planning not what have you had? :)) It all sounds lovely particularly the soup and CAKE.

Is that the last of your Xmas dinner disco?

The non-vegans are having the last bit of the Christmas macaroni cheese this week. And I offloaded the Christmas ice cream to my parents at the weekend (we don't recommend Cecily's!), so my freezer is finally clearing!

Braised leeks, puy lentils and Dijon mustard


Lunches include BLT salad, California quinoa avocado salad and veggie burrito bowls.

T: Golden mushroom and orzo soup, focaccia, chicory and rocket salad with prosciutto and burrata. Cake :love:
W: Dhal with crispy sweet potato, rice and coconut chutney.
T: Black pepper tofu, broccoli, smacked cucumber and rice.
F: Pumpkin lasagne with scamorza and buttered sage. Chicory and rocket salad.
