We had this tonight. I made it yesterday to save time so the sauce kind of disappeared into the pasta!

I think my squash was a bit sweet (I could only get hold of a BNS) but nevertheless it was very nice... is there a vegan alternative to Worcestershire sauce? :lol: I had to sprinkle some over to counteract the sweetness a bit.

We'd have it again but would add probably fry some onions and soaked porcini mushrooms to give it a bit more oomph.

Jusst reporting back that it was indeed very good! I should have reduced the sauce a bit more first but it was delicious.


This week has been a bit hit and miss as we are away on Friday so we had:
S. Roast chicken dinner
M. Chicken salad sandwiches
T. Mushroom Shawarma which was absolutely delicous. The courgette hummous was amazing (I was worried it would be a bit of a mushy mess)
W. Chicken gyros
T. Beef and gravy rolls

Lunches have been leftover from the freezer.

Henderson’s Relish. Or Biona do a vegan version.

We had it on Friday and I enjoyed it. Even Sproglette ate some and she’s not a squash fan generally. Elvis wasn’t keen mind. :ella:

This week:

Sausage, mash and veg
Stuffed squash and Swiss chard
Harissa humus, roasted veg and freekeh salad
3-cheese veg packed pasta bake
Cauliflower, coriander seed and coconut curry
Lentil ragu with a spaghetti

A spaghetti reminds me of the time I was hungover and asked P to get me a bacon :))

This was nice. :yes: We bought the flatbreads and used creme fraiche for the courgette dip (didn’t bother with the coconut dip).

We used normal yoghurt the second time we made it and it was just as nice.

We're having the tandoori carrots from the same site tonight.
