This never looks anywhere near as good as it tastes. Spaghetti with pangrattato.

Trying to limit my bread intake due to menopause belly, and it always leaves me uncomfortably full, but really fancied pizza tonight, so though I would give this cauliflower pizza base a go. It’s really tasty, obviously not exactly bread like but a really good sub.

I topped it with goats cheese and prosciutto.

I tried a new apple muffin recipe today (in anticipation of my tree fruiting and needing to use up a glut) They went down well even with picky J, so will be perfect for lunchboxes.

Your soup looks lovely, Rosa. Do you have a recipe? I am in a rut when I have leftover roast chicken and could use new ideas.

They look good!

I can't remember where the original recipe came from but I've got it in my head! It's super quick and easy.

Shred leftover roast chicken, and ideally make a stock from the bones (or use a good quality bought stock). Put the stock in a pan and add chopped ginger, garlic and chilli, leaving to infuse for a few minutes before adding veg (I used sweetcorn and kale but use whatever you fancy). Cook for a minute or two then add the shredded chicken and dried rice noodles. Leave on a low heat, and when the noodles are done add chopped spring onions and a splash of soya sauce. That's it.

If I fancy this but don't have leftover chicken I poach chicken breast in the chicken stock, remove and shred, then carry on as above.

I’m enjoying the recipes from Atul Kochhar’s Curry Everyday so far. They’re full of flavour.

Also, a Halloween chocolate mousse. It’s the first time I’ve made one with silken tofu and it wasn’t bad at all.
