This was really good. The tofu is grated then marinated before baking. P reckons it could work for pulled pork type dishes (in appropriate sauce) and would be better than jackfruit (which mings).

I agree about jackfruit, I’m not veggie but quite like a few veggie alternatives but I tried jackfruit and couldn’t get away with it at all, it had a really weird taste and texture.

The tofu looks good! I do like pulled mushrooms in place of pulled pork/chicken. King mushrooms pull into shreds perfectly and are really quick to cook. I love them in tacos.

Annoyingly, one child likes tofu but won’t touch mushrooms and the other likes mushrooms and isn’t keen on tofu.

The chickpea pancake with the smashed cucumber was nothing special but tonight’s kebabs were good.

I’ve had a can of fancy stout in the fridge since Christmas that wasn’t going to get drunk. And watched Is It Cake Too? On Netflix yesterday where they made chocolate stout cake. So I did the same today. I had to buy a new cake tin in the right size and found these reusable tin liners too (which were amazing!)
