I haven’t had a bagel in ages! That looks and sounds delicious and has really made me crave one.

The chicken thing looks nice too.

This is cannellini bean, cauli and squash traybake. The sauce is tahini based.I subbed the asparagus for frozen tenderstem to make it more seasonal. The only cauli in stock was a pretty romansesco.

Smoked carrots sound intriguing.

I have a Mexican Vegetarian Lasagne in the oven. It is unlike any lasagne I've tried, as it has tortillas instead of pasta, a cottage cheese/spinach mixture instead of béchamel, and salsa and beans instead of ragu. Otherwise it is very traditional ;).

It will either be good or it won't, is my outlook.

I wish I liked cauliflower. It seems so versatile, but I can't bear the texture of it.

Nigella’s Mexican lasagne with tortillas is usually very good, so I’m sure it’ll be fine.

We’ve had lasagne too, and I used red wine instead of white in the ragu and Squeak noticed. :lg: There’s plenty for leftovers which is helpful.

I made beet & brown rice burgers earlier, which look v bloody with the beet! We will try them tomorrow.

Mexican Lasagne sounds good.

Your burgers look tasty and sound very virtuous, absley.

Chicken and Bacon Caesar Salad tonight. It’s not the most photogenic but it tasted fab. After I took the photo I remembered a bit of rocket was languishing in the fridge so I threw that on too.

Deeply inauthentic Vietnamese-ish beef noodle salad with some peanut rayu. I did a large beef joint for NYD and am trying to power through all the leftovers. I had already started eating when I thought to take the photo so it is not artistically arranged.

Goat that’s perfect!

I tret myself today as both mr and S refuse to try celeriac so I bought one for myself, I’ve made a leek and celeriac bake with blue cheese (ok not healthy but I fancied it!) and celeriac purée as im sick of seeing it on masterchef and it knowing what it tastes like.

So tomorrow is those two, I’ll report back, I stuck a teaspoon of mustard into the purée as I had my usual “must add something!” Fear.

It was just ok. Sometimes I think that changing everything to low fat versions just sucks the depth of flavour out, and this was a bit like that. Not unpleasant, just not great.

This is proper fridge clear out food: red gurnard with tomatoes, garlic, capers, spinach and whatever else needed eating, and a slaw made with malingering sprouts. :))

I know what you mean, Morgs. Often I think it’s best just to have a slightly smaller portion of a normal thing, maybe with a side that’s super low calorie, like a salad or something. I don’t think I’ve ever had gurnard, Goat, but that looks nice.

I also used up leftovers. A kind of ham carbonara with peas.

That's a shame Morgs. I didn't realise you were doing a low fat version and can definitely see why it wasn't what you hoped. Lovely carbonara, Ashley.

I have sweet potato nachos lined up for today, as a fridge clear out option.

This was the last planned meal of the week - coconut and tomato dal with crispy tofu and cashews. It will be variety of leftovers until the next delivery. - the freezer is packed!
