This is my colleague's recipe.

Cinnamon Swirl Banana Bread
For the bread:
3-4 over-ripe bananas, mashed up
1/3 cup melted butter
1 cup sugar (I think I used more like 3/4 cup)
1 egg, beaten (I use large)
1 tsp vanilla essence
½ tsp baking powder
½ tsp bicarb of soda
dash of salt (not needed if butter is salted)
1 and 1/2 cups plain flour

For the swirl:
1/3 cup sugar (I used a bit less than this)
1 Tbs cinnamon (I used a bit less than this)

Preheat oven to 175 °C. Butter and line a loaf pan with greaseproof paper. Mine was 9 x 5, but you could use any sort, I suppose. Just keep a close eye on it in the oven, and adjust the time as needed.
Mix bananas, butter, sugar, egg, and vanilla together (I used wooden spoon). sprinkle baking soda and salt around on top of the banana mixture. Then gently stir in flour. Be careful not to over-mix!
In a small dish, mix together the 1/3 cup sugar and 1 Tbs cinnamon.
Add half of the batter to the loaf pan and then sprinkle a little more than half of the cinnamon-sugar mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
Bake for 50-60 minutes, but remember, if you’re using a different-sized loaf pan, be careful and keep a close eyeball on it!

Optional extras:
• Milk or dark chocolate chips (add to batter before or after flour)
• Chopped nuts

It was amazing. I am waiting politely until it's acceptable to ask for another piece. :)

I think consistency is key - just grab a teacup and use that for everything. Or there are plenty of conversion sites: http://www.recipes4us.co.uk/us_cups_to_weight.htm" onclick="window.open(this.href);return false;

Polite? Ask? Of course you're right, that's what you should do, yes. I would too :look:

Lazzi - cups are easy just measure by volume rather than weight, just shy of 250mls should do it if you've got a measuring jug or something suitably measurey.

ETA: or what Pip said . Or, what Beena said .

I'll shurrup now.

Okay, 1/3 cup of melted butter = 100g solid butter melted.

1 cup of sugar = 230g or 8oz

1.5 cups of flour = 230g or 8oz

1/3 cup sugar = 100g or 3 oz

The batter was quite thick. It's still in the oven so I'll see what happens. I used 3 large bananas, but maybe a 4th wouldn't have gone amiss. And I only needed about half of the sugar-spice mix.

Very good recipe! Although if I make it again Ill leave off the cinnamon sugar from ontop and just have it in the middle.

I made this today and it is lovely. I went easy on the cinnamon but it could have handled more, especially inside. I used dark chocolate chips as well.
