Summery food

The hot weather has snuck up on me and I'm all out of synch and can't remember what I usually cook/eat in the summer.

I made Nigella's zataar chicken with fattoush: https://thelemonapron.com/zaatar-chicke ... ush-salad/ on Saturday after we'd planned something else with the chicken but were missing a vital ingredient and I realised we had everything in to make it. I used to make it all the time but had completely forgotten about it and hadn't made it in years.

Please share your favourite summery recipes - could be bbq stuff, desserts, salads, drinks - anything!

I love tabbouleh with lamb kofta. I usually use this recipe for the tabbouleh but double the grain to salad ratio (as it's closer to my mum's version).

I made a cob salad last night, which went down really well. I made garlic croutons and did some cajun quorn for P.

Feels more indulgent than it's calorie count which is always a bonus with me.

We've only eaten salad leaves we've grown since about March, so that helps everything salady feel extra summery.

We've been having pan fried fish with new potatoes and salad a lot, which is dead simple but reminds me of lunch sitting outside of a taverna in Greece, so it makes me extra happy. See also Thai tofu noodle salad (but replace Greece with Thailand, obvs.)

Koftas, tabbouleh is a great call -I prefer my tabbouleh more herby than grainy. Cobb salad too - I love croutons in salad

Simple fish and new potatoes is good too - we ate a lot of fish last week self-catering in Whitstable because we could go to the fish market every day but I always forget to cook fish at home!

Home grown lettuce is really easy, Emma. I grow mine in a trough. It’s lovely!

My brain is not yet working on this front either but I'm eating asparagus at every opportunity and particularly like it with Delia's fried halloumi with lime & caper dressing. I usually add smoked paprika to the seasoned flour.

Absley I was literally just about to recommend that halloumi recipe! It's divine. I am going to try Emma's chicken as my parents are coming round next weekend. I've never heard of za'atar so will have to track some down.

Zataar should be reasonably easy to find in supermarkets (it's on Amazon though too).

I made this blueberry tart yesterday and I'd forgotten how easy and delicious it is:

It's not a pastry tart, you just mix the shortbread ingredients together, press half into the base, a layer of blueberries then sprinkle the rest of the mixture on top. Definitely choose lemon juice rather than the vinegar option though.

I like the look of that too. I need to get back into vegan and veggie stuff, I've got into a really bad habit in the last couple of years of just eating meat and carbs all the time.
