Went out for lunch with a friend yesterday and we had the most amazing Eggs Benedict with spinach and ham underneath, served on a brioche.

I’m making a lot of variations on a theme at the moment. This is firecracker beef. Again mega easy weeknight meal and super tasty. Also mozzarella and bacon parcels.

No photo, but I just made Nigella’s ham & eggs tortilla pie and it was amazing. So simple but really really good.
