We avoided cooking inside and fired up the pizza oven. I made a courgette and mint pizza which was so much better than I’d imagined!

It does look good! I have a lot of courgettes and a lot of mint, what base did you use? Is it a white rather than tomato one?

It's just grated courgette mixed with a little olive oil, salt, pepper and grated parmesan spread over the base. You were meant to add burrata or stracciatella after cooking but I only had mozzarella so just added that before cooking. I added the mint at the end. It was delicious. The mint was so good!

Iiiinteresting! The Bf was muttering about the sogginess potential of courgettes, but them being the base sorts that issue!

I think he was thinking sliced courgettes on a tomato sauce, which probably would be rather soggy :))

I imagine having home economists on hand help with that. I was meaning to catch up with Saturday Kitchen this week. I love Johannes and was hoping he’d reveal what his aftershave is after the BBC Breakfast presenters said he smelled good.

I recorded it and only watched Ixta and the Gelupo man making granita. I have no time for Matt Tebbutt and his chestnut hair.

Chiles rellenos with salsa rojo risotto. Grilled romano peppers stuffed with mozzarella and feta on a brown rice risotto which was just steamed rice mixed at last minute with a cherry tomato sauce flavoured with ancho and habanero chilli, cumin and coriander. Lime, coriander and spring onion at the end. Would make again, for sure. Just not on such a super hot day.

Her rojo sauce from that lamb enchiladas recipe was one of the most amazing things I’ve ever tasted. But so hot! I had tons leftover and had to calm it down with sour cream :lol: I want to try this.
